That brings on guilt because I have my shiny degree gathering dust. Everyone used to ask me if I would "go back to work" once the boys were in school. Not really. I still get that questions some, but it's of the "aren't you going back to work now that they're teenagers" variety. Um, no. Setting aside the fact that I homeschool, I don't think the income would be worth the sheer angst of having to be at a certain place at a certain time and control the chaos at home. Papa Bear is also in management and he has to be one to be able to drop everything and deal because, well, he makes the money. It's less putting-his-needs-ahead-of-mine than it is I like a roof over my head and food in my belly. Green Giant has a range of single-serving portions that are 40 cal each, take 2½ minutes in the microwave, and are really quite good. In fact, they have a pretty good selection in general. <br /><br />I take three or four of those and make a meal out of it. Say, one of their red potato/peppers/snow peas boxes (full box, 2 servings, 100 cal), with a single-serving broccoli & cheese tray (40 cal), a single serving corn tray (40 cal, but I can't have it anymore b/c of my gallbladder), and maybe some green beans (20 cal). I know, salads are out for you though. Seriously, all that frozen/canned stuff is the same story. It's RIDICULOUS. There are places that will make you meals, but they're so expensive. Maybe try to do it on your own and freeze them? Do it for 2 weeks at a time? Maybe we need to get together at someone's house and make our own damned diet food.<br /><br />I'm so with you. Those "diet" meals are mainly "diet" because there's no freaking food in there!
